1 Armadillo, quartered and deboned

1⁄2 tsp salt

1⁄4 tsp pepper

1/8 tsp Red pepper (optional)

Flour and cooking oil

Cut meat in small steaks. Mix salt and peppers together and sprinkle both sides of steaks.

Coat both sides of meat with flour.

Fry meat in preheated cooking oil over medium heat until both sides are brown.

When both sides are golden brown, meat is done. Armadillo meat is very tender and succulent.
